Face to Face with P&O Cruises Executive Chef, Trevor Glass

A familiar face on board, Trevor Glass has been with P&O Cruises for twenty years. Passionate about his work, he shares the same culinary principles as Marco Pierre White,“don’t over-complicate the dish. Use fresh, simple ingredients cooked well.” Driven by the challenge of overseeing 170 chefs in such a variety of venues, Trevor is dedicated to providing an exceptional experience for his diners. In regards to his Chaîne membership, Trevor comments that "I am very proud to be a member of a recognized International professional association. It is a great honour."

Where are you from?
A small village called Gortin in County Tyrone Northern Ireland, now living in small village called Eglinton in County Derry,

Where did you train?
Omagh Catering Collage for three yrs
Belfast for one year and four years in London

Various Hygiene certificates

What inspired you to become a chef?
My Mum and after a short spell in the Army

What are your favourite dishes?
A big lover of Italian food, Seafood, Fresh fish and I have a very sweet tooth.

What are your signature dishes?
I love working with fish and seafood, Coquille St Jacques is a real favourite. I also really enjoy the whole experience and satisfaction of making fresh bread and cakes

How old are you? Family?
44yrs old, my Sons are 16+15 yrs old

Favourite ship?
Aurora

Favourite ports of call?
Sydney and Acapulco

What do you do in your spare time to relax?
Eating out, Play sport, travel to watch Manchester United play and Gardening

Who are your heroes?
Anton Mosimann, Alex Ferguson and my family
